We have a bumper crop of plums this year so I spent last Saturday picking, baking, chopping, and cooking plums. My husband is not a plum fan but I think I won him over with the recipes that we tried.....I thought I would share them with you.....

Plum Bread Recipe  (adapted from my mom's zucchini bread recipe) 

Mix together:

  • 3 eggs

  • 2 cups sugar

  • 3 t vanilla

  • 3 t cinnamon

  • 1 t salt 

Add:

  • 1 t baking soda

  • 1/4 t baking powder 

  • 1 cup vegetable oil 

  • 3 cups flour

  • 2 cups chopped plums 

Bake

  • Pour batter into 4 bread loaf pans

  • Bake 350 degrees for about 30 minutes  

  • Let cool for 20 minutes and then turn out of pans

This batter can also be placed in muffin cups and baked for 20 minutes

Plum Cake Recipe (from Martha Stewart Living)

Mix Together: 

  • 4 T unsalted butter
  • 1 cup flour 
  • 1/2 t baking powder
  • 1/4 t baking soda
  • pinch of salt 
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 cup low-fat buttermilk
  • 2 ripe plums thinly sliced 

Bake 

  • Pour batter into an 8" baking pan
  • Place sliced plums on top of the batter *see note below
  • Sprinkle 2 T of sugar over the top of the batter
  •  Bake 350 degrees for 35 - 40 minutes

*Note: The plums did not stay on the top of the batter.....helpful hint from my mom....dust the fruit with a bit of flour before placing them on top of the batter.
